Branzino en paper with veggies on the MiniMax

Set the MiniMax with the deflector feet up added the grill and set to ~400. Made parchment packets with sliced onion, potato, and fennel bulb tossed in olive oil, salt, and pepper, topped with a thin fillet of branzino with olive oil, salt, pepper, and fresh torn oregano. Cooked 15min. Served with the fennel tops chopped in a salad with slivered onion, a chopped naval orange, olive oil and white balsamic vinegar.

    Luckily our local grocery has a “sustainable” seafood section. It is all flash frozen, but as fine as I have had fresh off the boat. It is very popular in the towns in Italy and Morocco I have lived in, for recipes from there I want to copy I have cut down thick cuts of cod to replicate the texture when I can’t find branzino.
