After botching my last two briskets, I finally nailed one!
Snake River Farms about 14 pounds pre trim. Seasoned with S&P and smoked over cherry wood.
Dragged out the smoke for insurance.
Point getting prepped for burnt ends. Flat got sliced for dinner.
Burnt ends and a few end pieces from the flat. These were amazing.
Real Deal Holyfield.
Brisket Nachos.

In the interest of decorum I will refrain from the point sacrifice but that's a personal cook preference.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
