Some nights, you gotta improvise. Tonight was one of those nights.
Wife felt like Greek, but we had no pita and no yoghurt or sour cream.
Took a look in the cabinets and fridge and scrounged up some garlic naan, cottage cheese, chicken, tomato, sweet onion, and tzatziki. Blended the cottage cheese to a smooth consistency, then added all of the typical Greek ingredients (i.e., oregano, lemon juice, etc.). Marinated the chicken and grilled it. Made a homemade Greek salad on the side.

I love making a meal that makes use of food that might otherwise spoil. So satisfactory, and it can really push you to get creative.

Thanks. Cottage cheese can be pretty versatile, and adds a good amount of protein to any meal.Wine was nothing fancy. Just some Stoneleigh Sauvignon Blanc. -
