what to do with thin beef ribs from costco?

I saw beef ribs at Costco last week, got excited, and bought them. They were vacuumed sealed but I just expected thick ribs. Instead, it was nearly 5# of thin ribs. I have no idea what to do with these. Smoke? Grill over high heat? Sous vide and then finish with a quick hit on the grill? what about rubs or marinade?

Have braised them with lamb shank,oxtail etc if those are shiner back ribs. You really need to pick thru the case at the market and be prepared to walk away if need befukahwee maineyou can lead a fish to water but you can not make him drink it

For me I jus salt pepper garlic MSG, smoke for and hour or so then sear off, you can also cook hot ant fast direct …there are many more complex recipes, look up Korean Style ribs I prefer to keep it simpleFanOfFanboys said:

awesome, will do. much appreciated. little disappointed they were not what I thought (though that is probably my fault) at least I should end up with something pretty good and I can try something new

Awe man!! I am going to Costco to go look. Those are one of my favorite way to get beef ribs. Usually I go to the Mexican butcher and ask for tablitas.
You are in for a treat. Hot and fast, season anyway you like. I like pepper and Goya (yellow lid version).
Korean BBQ is a great way to go too.I would rather light a candle than curse your darkness.

agreed! These are actually quite a bit better than the beef back ribs I made some time ago, so you shouldn't be disappointed at all, @FanOfFanboys ! I braved Costco mid-day on a Saturday just to find these. No dice, sadly.

Lucky dude. Never see those, bulgogi marinade for me, but I cook a thickr slice with a good amount of salt med rare as wellfukahwee maineyou can lead a fish to water but you can not make him drink it
