Butt Cakes

I made a bunch of pulled pork over the weekend, and was looking for something different to do with the leftovers. Found this recipe online:

Looks worth doing! So I gave it a shot.
It’s easy. You mix up a batch of cream cheese, green onions, jalapeño and some maple syrup and rub with a hefty amount of leftover (and cooled) pulled pork:

Form into patties

and then apply the usual treatment of flour, egg wash, and panko (I did not have pork rinds handy, maybe next time) and fry them up:

I topped mine with some pickled onions, pico de gallo, and some of that Japanese bbq sauce @Mickey likes:

Pretty, pretty… pretty good!
I have been thinking there really needs to be a recipe using pulled pork that’s so good and delicious, that it can only be called “Butt Crack”. This didn’t quite reach that level, but I was happy with it. The search continues…

Around 30 years ago I had found a recipe that used pulled pork in cornbread- To this day, this is widely regarded as the worst thing I have ever cooked.
I will give the butt cakes a try and see if that's a good way to use up leftover pulled pork. -
On Christmas Eve Mom always made a midwest-US "Ladies Home Journal"-type recipe: into a pot goes a block of Velveeta, a can of Rotel tomatoes w/green chiles, a pound of browned hamburger, some worcestershire sauce and salt, it was then rolled up in flour tortillas. It wasn't authentic anything except "midwest-US Ladies Home Journal", but I liked them as a kid.
Replace the velveeta with half as much real, melty cheese, and add some more chile, and replace the ground beef with your pulled pork, and I bet that'd be pretty good. Hmmm.“All you need in this life is ignorance and confidence, and then success is sure.”

We use it for many things, typically. The wife makes pulled pork enchiladas (delicious) and I make pulled pork bbq pizza (also darn good). My absolute undisputed favorite is pulled pork burritos. Use whatever you'd normally put in there.
