I love cardamon, buy it in the pods, crush and take the seeds to grind up as needed. The whole pods are good in some curries, just bruise and put them in the sauce. Citrus taste from the pod as well as the taste of the seeds.alaskanassasin said:

I assume that's ground cardamom? Or does it have other stuff in it?alaskanassasin said:Can I sub cardamom spice? @caliking how much if so?
Try 1/8th tsp. Maybe 1/4 tsp, if you dig cardamom.

alaskanassasin said:Can I sub cardamom spice? @caliking how much if so?This is likely just ground cardamom pod. Always better to grind fresh when you can but this should be fine to get you hooked on the curry train. I didn't look at his recipe but knowing him, he probably mixed imperial/metric weights and measures freely and eyeballed it for himselfedit to add: I looked at his recipe and he called for 1 black cardamom pod. I had a black cardamom pod and weighed it for you. it was .5g in weight. The curry boss says she would start with .25-.5 tsp of the ground stuff. use .25 then add more to taste is what I would recommend.Keepin' It Weird in The ATX FBTX

I will also add that if this is something you enjoy, toasting and grinding fresh make a HUGE difference in Indian cooking. It's almost not even the same flavors.

Guy buys 0.19 lbs of spice. Expert says, hmmm. Try 1/8th teaspoon. Guy has enough spice for approximately 352 dishes.
This is exactly why I have cabinets full of spices.
(For pedanticities, I assumed 3.92 gram per 2 teaspoons)

Would it be pedantic to observe that "pedanticities" is not a word?Ozzie_Isaac said:

I would add that black cardamom husks are, well... huskier than green cardamom pods. So the seeds are a lesser portion of the weight vs. green cardamom. But, this is airspeed velocity of an unladen swallow" stuff. And, also why weighing has no place when you're cooking Indian (or other) food!!alaskanassasin said:

Question: I have a small jar of green cardamom seeds, and one recipe told me to stab the seeds with a point of a knife "to release their flavors" (they weren't toasted). Easy enough, but hate to hunt down my reading glasses to cook something. Is this common?caliking said:

botch-we give ours a light whack with a mallet on things that use whole pods to release the flavorKeepin' It Weird in The ATX FBTX

+1. The flavor is lighter if you leave them uncracked. We usually leave them intact for rice/pulao/biryani type of things, but crack them when adding to curry type things. The Cen-Tex Smoker said:botch-we give ours a light whack with a mallet on things that use whole pods to release the flavor#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
