Pop's birthday tomorrow. He's a curry fan but he doesn't have it very often as mom isn't a fan of the smell in the house.
So I'm hoping to put something together last minute. Any ideas or recipes you guys/gals like?

Although I'm not a fan of the Saveur website, their Indonesian chix curry is in regular rotation here. Cooked it for an eggfest too, and folks seemed to dig it.

Posting here, @Canugghead @WeberWho @Mattman3969 as a few have requested the recipe. Typed it up some time ago, to share with others.
My mom's chicken curry recipe. Can be made with a whole chicken, skinned (cut into pieces) or 4-6 leg quarters. Turns out better with bone-in chix. Yes, the measures are weird, but that's how my mom passed the recipe downHeat 2 tbsp oil (I use mustard oil)Add2 bay leaves4 cloves10 peppercorns1 stick cinnamon (about 2-3" long)1 tsp whole cumin2 green cardamom1 black cardamom- let it sputter until aromatic. Watch the cumin to make sure it just darkens without burning.Add1 baseball sized onion, pureed1 tbsp ginger paste or puree1 tbsp garlic paste or puree
-I usually blitz the onion, garlic, and ginger together.Cook until the oil starts to separate from the onion. Kind of like making sofrito for paella.Add the chicken and saute until the chicken browns a bit.AddSalt to taste1 tsp turmeric powder1 tsp cayenne (or to taste)1 tsp cumin powder2tsp coriander powder1 tbsp vinegarSaute until the oil separates from the spicesAdd 1 tennis ball size tomato, pureed.Cook until the oil separates a bit from the sauce.Add enough water to make as much sauce as you want, and cook until the chicken is cooked through.Tastes great with rotis, basmati rice, pulao, or just about anything!#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
no expert on curries but this was simple and good. i plant thai basil every year now and have done this several times with lobster or shrimpcan of cocanut milk,1 tbls sugar, 2 tbls red curry paste, some lime juice, about a quarter cup fresh cilantro (basil would have been better) and i put a tabls of fish sauce in (probably could have ommited this as the shrimp tails brought up the seafood taste). pineapple and shrimp. cook the milk down a little, add everything but shrimp, bring to a soft boil until pineapple is good, add shrimp and take off the heat. next time more curry and a little more sugar.

Edit: Garnished with coriander and served with basmati rice. Love it. Great idea with the vinegar which helps to extract the good stuff from the bones. Thanks again @caliking.canuckland -

No, no, no, sorry!!! It wasn't any of the recipes listed above. Sorry about the confusion. I completely forgot I bookmarked a curry recipe I found a few years back once I realized I wasn't going to have the time to track down spices this afternoon.

@caliking For beef or pork butt curry we usually finish in oven. Since chicken cooks fast we did it on stovetop entirely. For double the recipe (10 leg quarters) we added just half cup water, I was reminded chicken releases liquid when rendered. I know it'll taste better tomorrow but can't wait, the gravy will thicken up too. btw, we reduced cumin and cayenne by half and it was perfect for us.canuckland

I didn't have enough time to go with a real curry dish. I ended up doing a shrimp curry dish with the ingredients I had on hand or was able to get in that short amount of time. Wow! I forgot how great this thread ended up being. I need to try some of the other recipes posted here. They all sound delicious.
@Ozzie_Isaac - Curry powder is like "bbq rub"... it can be many things, many different flavors. I'm yet to find a curry powder that stands by itself in a dish. Typically, best used as a garnish (like garam masala) to add some extra flavors to a dish.
