Reverse Seared for about an hour to 100 to pick up some smoke. Pecan in this case. 

Then Sous Vide 2 hours to 130. 

Hot sear. 

Served with duck fat potatoes.

    Got several more in the freezer. Hope they turn out as good a that looks.

    Now that you have conquered teres major you are just a very small step from conquering the duodenum and the jejunum. It is my sincere hope that you take this next step. You will be eternally grateful that you did.

    @SGH, speaking anatomically, I'm not sure that the proximal GI tract is the "next step" from a shoulder muscle.  Just sayin'.

    On topic, that teres major looks great.  I've never thought to use smoke, then sous vide, then sear.

    Great cut and great cook!  Nailed the whole deal.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
