kinda thin on the prime ribeye, one recipe i saw said to mix cayenne salt and water and give a quick drizzle while cooking it hot direct, i didnt do that but next time i will.Legume said:its a chimichurri rojo, first time making it, closer to a salsa than traditional.this was pretty much the recipe i followed, was hand chopped, not in a blender, could have used more salt and heat. (tastes really salty before adding the vinegar water and oil). mixed everything together except the water vinegar and oil and let it sit for an hour. brought a third cup red wine vinegar and a third cup water to a boil and poured it on top and mixed to sort of blanch the onions and garlic. had put fresh bay leaves into the boil as well. next time more heat, more garlic, maybe add some anchovies to the boil. let it sit in the fridge overnight then warm back up on the counter and drizzle the evoo on just before serving. was good but needs tweaking- sprigs of thyme
- 1 cup parsley, will add additional cup cilantro next time, had none
- 1/2 red onion, roughly chopped
- 6 cloves of garlic, peeled
- 1/3 cup red wine vinegar
- 1 fresh red bell peppers, chopped
- 1 cup olive oil
- 1 tblsp salt 1 plum tomato skinned and chopped
- 1 tsp red pepper flakes
- 1 Tbs paprika
- 2-4 Tbs fresh oregano
- juice of one lime
- 4 fresh bay leaves

Thanks, sounds great. First glance it looked like a topping we make for bruschetta that is loaded with tomatoes, garlic, basil, balsamic, more garlic, red onion, more garlic and some shaved Parmesan. I will have to try the red chimi.THANK YOU FOR YOUR ATTENTION TO THIS MATTER
