Rubbed with Mickey’s Coffee Rub recipe... smoked over 8 hours with hickory... FTC 2hours before serving...Damn Near Perfect..
served with some smoked Boudain , Maque chox, Potato Salad ... and of course a nice bottle of vino ...

    Smoked at 225- 235 dome temp.... Foil- Towel- Chest... it’s a method of resting and maintaining moistness and temperature...

    I always had trouble as well. I have bought some cuts like this off of crowdcow.com. Not the cheapest place but living in PA some of the real bbq cuts are a little difficult to find. 
  • You're in Dallas. Go to Deep Cuts butcher shop on Belt line and Coit and get the Akaushi Wagyu beef ribs.  It will change your life
