... with my diy rotisserie. Opened a half loin, seasoned with salt, garlic, garden sage, fennel seeds and rehydrated orange peel (forgot chili flakes). Rolled and tied, then cooked for about an hour at 325 till IT 150.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Very nice! I did the same thing a couple weeks ago, but used garlic, caramelized onion, spinach, and feta cheese.
