(RUSTIC) Pizza Day!

I hope you are all healthy and well. 

Stupid Covid has depleted every pack of yeast nearby, so I went with this:



I have a fantastic dough recipe. Tossed it all together with some special 00 that is ALSO probably five years old....



A few hours resting covered, divided into fourths for deep dish today (thanks for the suggestion @photoegg), and into the fridge overnight...



Looks like I’m good to go! Now -  I just need to find the thread that tells me what temp to run...


BTW - it’s just me in the house here, so if anyone wants some pizza, feel free to drop by.
