Stupid Covid has depleted every pack of yeast nearby, so I went with this:
I have a fantastic dough recipe. Tossed it all together with some special 00 that is ALSO probably five years old....
A few hours resting covered, divided into fourths for deep dish today (thanks for the suggestion @photoegg), and into the fridge overnight...
Looks like I’m good to go! Now - I just need to find the thread that tells me what temp to run...
BTW - it’s just me in the house here, so if anyone wants some pizza, feel free to drop by.

Jack it up to about 600 and you will have a BEAUTIFUL crust on that pizza. The dough will bubble and you’ll have those wonderful crispy bubbles to eat! YUM! Your dough looks fabulous! I wish I had a recipe that worked. Let’s see your finished pie!

It looks like it worked! I don’t think that expiration date on yeast is critical if the bag is unopened. The “pizza crust” yeast that we get here contains dough relaxing enzymes that results in funny dough texture; not bad, just funny... I much prefer instant yeast, @Photo Egg is sending you the right stuff, very nice of him!
It is crazy how many people purchased yeast because of the pandemic but have no clue how to use it.
