4 Racks of High Society for Memorial Day

High Society = @YukonRon peach preserves, with a little modification.

Tried to compare the St. Louis cuts from BJ’s Wholesale (cheap and trimmed) and a local chain butcher called Meat House (not cheap and not trimmed). All 4 racks were consumed so fast at the Prince’s socially distanced bbq that I was lucky to get a couple of unidentified bones, so no scientific results to report. I’m told by a bunch of inebriated 22 year olds that they were the best ever, so I suppose there’s that.
I combined a big jar of Jersey Peach preserves with about a quarter as much of spicy bbq sauce that I had on hand from last year’s or an earlier forum exchange. Slathered/set the sauce at hours 4 and 5, on their way to 6.5-ish at 225-250 degrees. Wish there were leftovers!

Hard to believe I forgot a pic. Slathered/setting racks below. I know some people have never seen this kind of thing before so I’m glad I caught the error.

Well cooked, presented, and named. A win all around. The ribs look awesome.

Great cook right there. That's a full load for your BGE-way to manage the entire cook process as well. Congrats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

You just can't go wrong. Your cook is exactly what I do for our daughter. She will not eat them any other way.
Once you start this, you are doomed, at least around my house anyway.
Beautiful cook my friend. Excellent results from a fine fire tender and cook."Knowledge is Good" - Emil Faber
