Wanted to try Chefsteps trussed chicken on my red neck XL rotisserie. Was pissed that the bird was missing big chunk of skin below the neck, which kind of defeats the purpose of doing it Chefsteps way to protect the breast with skin. Tooth picks and excess skin from butt cavity came to the rescue...
