VIRGIN! — at brisket burnt ends and FB500

ok. Some of you know I’ve been “furloughed.” It’s been terrible on top of an already terrible year for me. I survive by keeping busy. As busy as I can. And I’ve been cooking for people around here who don’t know good BBQ unless you throw it at them.
A friend lent me his old school GURU, and I finally slept through the night (tornado and all). So - order a FB500 and break it in the only way a San Antonio North Carolinian could:
BEEF BRISKET WITH BURNT ENDS
Rub is 1:1 garlic salt and coarse ground BP
(by weight)
brisket are prime from costco
rockwood charcoal
half mesquite half cherry wood
225* grate
24 hour cook
flats were separated by the back end of a knife and double wrapped FTC
Points were cubes and tossed with extra rub, homemade Texas Ranch sauce, and a finishing drizzle of dark Karo
back on the LBGE at 350 to start. I might bring that down soon to prevent scorching.

That looks awesome. I made some burnt ends last weekend as well. Seems like the perfect temp depends on what sauce you use. I've had some do well at 275. Last weekend I used Sweet Baby Rays and it seemed to need 325+
