I have an email in to Jonathan @stlcharcoal about a FB500, I think....  

smoking LOTS here. Two briskets are already “sold” for this week. Will be doing burnt ends with them. Might do a trial pork burnt end shot here before that just to get the whole sauce/rub thing right before risking the point...

anyway. Lots going on. Hope all of you all and your families and loved ones are well and staying safe through this..

  • Great to see you slinging some grub during your unplanned vacation. I have found that when you are cooking overnight with a deadline (food delivery in your case and usually a class in mine) that a controller sure helps you sleep better. I never use them unless I have a class but I have actually had a fire go out and I had to do all kinds of tricks to get it ready for class (and it sucked). Ever since then I can’t sleep when I know I have a deadline and I’m cooking overnight without a safety net.
