OT: needing a great tuna fish salad recipe: OT

Tomorrow my beloved of 53 years catches up to me at 75 years young. Over the years she would get on several kicks of just eating this or that for her lunch as we seldom ate together. Then she would stop and move on to something else. Her pattern left us this Summer with 38 can of "white abacore tuna in water". Yes, we could just take it to a food pantry, but we both have gotten on to liking an ocassional supper of tuna salad purchased from a local grocery deli fo $8 a pound.

Now with all that explained does anybody have a kick butt tuna salad recipe?...38 cans are a lot of tuna!

    Happy Birthday to the wife and congratulations on making 53 years together. I was going to make a money joke but I have really been trying to do better and contain myself here on the forum. Sorry I can not help with the tuna.

  • I would not suggest using this recipe on all 38 cans though. Try a few recipes and let us know what you liked best. Whatever you do, don’t omit the curry in the barbie’s recipe.

    Not an actual recipe but I hit mine with onion powder, garlic powder, dried basil, pepper, mayo, onions, sliced dill pickles, sliced raw jalapeños, lettuce, and dump some salsa in at the end. Mix together in a bowl and eat.

    • 1 (7 ounce) can white tuna, drained and flaked
    • 6 tablespoons mayonnaise or salad dressing
    • 1 tablespoon Parmesan cheese
    • 3 tablespoons sweet pickle relish
    • 1/8 teaspoon dried minced onion flakes
    • 1/4 teaspoon curry powder
    • 1 tablespoon dried parsley
    • 1 teaspoon dried dill weed
    • 1 pinch garlic powder

    i keep it simple, mayo, celery, onion, a little mustard, pepper, lemon juice or capers.   theres also tuna casserole and tuna patties/cakes and tuna melts.  im not a fan of albacore packed in water, prefer the light tuna packed in oil. also like flaked salmon in omelets with bell pepper and tomatoes, bet tuna would work as well

    I would add that small diced celery would be a great addition to the Barbies recipe along with a pinch of salt and pepper.

  • Good mayo like hellman's or dukes, and I have a heavy hand with the wickles relish. Plus onion and garlic powder, s&p, crushed red pepper, and a dash of cumin.

  • I have made this and it's really good. I used jarred tuna, but the recipe also calls for canned. I used way less salt. Give it a try!

    Congrats! - and I have one that my wife created years ago - its different..


    Basically - Tuna + Pico de gallo (variant) + little Franks red hot

    Tuna/Pico 'ceviche'  

    1 can tuna, lightly drained
    1 Roma tomato diced small
    1 thin slice of yellow onion, diced
    1-2-3 serrano peppers (depending on your tolerance) diced very small
    1/2 bunch of cilantro tops diced
    Juice of 1/2 juicy lime (smooth skin / not puckered)
    mix it all up and salt to taste

    We eat this on saltine crackers, and add a dash of Franks red hot per cracker.

    I tried the Barbies recipe too. Except I had no sweet relish and used only 2 Tbls of Mayo. Very good!

    I have long been partial to Subway tuna sandwiches. A few years ago, I finally Googled the "recipe" and it turns out it's just chunk light tuna (in water) and mayo. Put that on an Amoroso (or other good quality) bun with shredded lettuce, green pepper and provolone! Or whatever you like in the way of fixin's. Delicious!

    Just substitute the mayo with Greek yoghurt to your taste.

    We’ve always added 2 hard boiled eggs to a large can of tuna...diced onion and sweet pickle, salt and pepper, and just enough mayo to smooth it out.
