Sunday beef ribs. We like pictures so I will keep it short with the words. On the grill at 9:00 am with oak. Cooked at 290F dome.
One with hardcore Carnivore, one with paprika, salt pepper, and a pinch of cayenne.
Not a bad meal.

Thanks John. I liked them for different reasons. The hardcore was a bit salty compared to the other, so for that reason I would choose my mix on these. But I did the same thing a few weeks ago on burgers, and I liked the hardcore much better.--------------------------------------------------

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Nailed that cook. Congrats. As I am sure you know, any beef ribs beat their pork cousins every time. Way to bring it home.

Boileregger said:You want to ask for plate short ribs, the butcher can look for IMPS #123A.That's good advice but many butchers will sell you Chuck Short Ribs (I think these are IMPS #130) when you ask for Plate Ribs. They are very similar but the plate ribs are usually considered better quality meat. In any case, try to get them to sell them to you as full slabs since I think they cook and taste better.Restaurant Depot usually stocks both ribs and since the cryovac packages are clearly labeled, you will be getting exactly what you want.Large BGE
