In honor of the upcoming Butt Blast, a final "Get your shidt straight" type of cook went on at 4 A.M. this morning.
I brined a pork but in an aqueous solution using molasses and pickling salt for 24 hours. I can't begin to tell you how important this is to juicy, tender, smoked pulled pork.
After the brining, I took the pork butt out of the brine bath, toweled it off, and liberally applied a blend of commercially available seasonings, Po-Chix and Pig Dust. Allowed it to sit for 16 hours.
Started the fire in the XL, set it up for elevation high in the dome. I added peach wood chunks to go with my Rockwood lump charcoal, about 8 pieces, fist sized, to bring in the sweet smoke flavor. Set at 225F cooking until about 202F IT.
Prior to placing on the BGE to cook, I covered the entire pork butt with peach preserves.
This does a couple of things; Adds another level of deliciousness to the crust, and as it cooks, it keeps moisture in, as well as, absorbing the smokey peach flavor.
I do these pretty regularly, the pulled pork, using this method, is the best.
Tonight, obviously, we will be doing pulled pork, slaw and baked beans.
I made up a pineapple salsa to go with tacos, and for those wanting sammies, I will be making a spicy tomato based molasses sauce infused with peach preserves to serve.
Wines tonight will include, but not be limited to; a Southern Rhone Grenache Rosé, a Willamette Valley, Oregon Pinot Noir, and a Dijon White French Burgundy. After those 3, all bets are off. When we head out to the fire pit for the remainder of the evening, I am certain some bold French red blends and California cabs will be shared.

Forgot to mention we are also going to have a couple of wings for dinner, too.
I have no idea what is in this rub other than previous mixes that when the bottom of the bowl had just a little left, I dumped the remainder in a jar, so there is probably 10-12 different mixes using dozens of spices. I threw a little cayenne on them too, just because.
See how these turn out. Starving college students and neighbors don't care. Neither do I.
Might use some cherry to add just a touch of smoke for these......
