Cooking up some Costco St Louis Ribs Today on the Pellet Grill. (Smokin Brothers P-36)

Not so much... Taking the easy way out today. I have some spring cleaning I need to do with my ceramic setup... My stainless table - nest setup needs a good cleaning after winter. (snow just melting up here)

Programmed Savannah Stoker Controller to cook at 180 F for about 1.5 hours. Then, bump up to 270 F for the remainder of the cook:
Summary:
1.5 Hrs at 180 F (for smoke)
1 Hr at 270 F naked
1 Hr at 270 F Wrapped
Sauce then 20 Min at 270 F
Rest for 10 minutes
Serve

Those ribs look phenomenal. That is a really cool looking rig. Honestly if I had one of those I doubt I would use my egg much for ribs. All that room is really nice.
Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Thank you very much @SmokeyPitt . It does have quite a bit of room for ribs, butts and briskets. I also have a couple of top racks, too, that I had removed for this cook. The grills are made and assembled in Missouri. I do not have any affiliation with the company at all but they have a pretty sturdy build and this model has an insulated cover. I have actually found that it complements my BGE fairly nicely. (BGE still owns searing and pizzas, of course.)
