SV then Seared Yellow Fin

I know I know that YFT only needs a sear but after research I wanted to try SV. 

This YFT swam at 105° for 45mins then a light coatt of Soy Sauce to hold the White n Black Sesame Seeds.  

On the mini  for a quick sear.  Mini was running about 650.  


Sliced and plated on a spring mix salad and edamame with a rice wine,sesame oil,tahini, minced garlic and ginger.  


I’ve done a bunch of straight up seared tuna which is great but the texture of the SV Tuna was unreal.  This will be my way to do Tuna from now on.
