SV then Seared Yellow Fin

I know I know that YFT only needs a sear but after research I wanted to try SV. 

This YFT swam at 105° for 45mins then a light coatt of Soy Sauce to hold the White n Black Sesame Seeds.  

On the mini  for a quick sear.  Mini was running about 650.  


Sliced and plated on a spring mix salad and edamame with a rice wine,sesame oil,tahini, minced garlic and ginger.  


I’ve done a bunch of straight up seared tuna which is great but the texture of the SV Tuna was unreal.  This will be my way to do Tuna from now on.

    All diamond plate cooks are noteworthy but this one is off the chart.  Nailed that YFN.  Absolutely one of those magazine quality pics and banquets.  Congrats.
