My wife was wiping the counters and my knife block is front heavy. So apparently it fell over and my chefs knife fell out and onto the floor. I guess I am now in the market for a new Chefs knife. I use a rocking style cutting motion and this doesn’t rock anymore. I need a workhorse that looks good but can stand some abuse and won’t die if someone puts it into the dishwasher because it will happen. Since it's the most used knife in the house I don't mind getting something nice any suggestions are helpful.

I agree. But with my schedule, I'm rarely the person who decides what goes into the dishwasher. I'm usually pretty good about cleaning up and putting up my knives and cookware. for what you do you need a beast. no shame in putting a work horse knife in the dishwasher after a 14 hours shift in front of the grocery cart. I would even look at the dexters and victorinox's of the world. get a fancy one for the house if you want but i totally agree that you should look at something that fits your life when you are doing the big cooks.Thatgrimguy said:

That's a good point. I tend to think of my road knives as only road knives. I should probably just use them at home too. I'm not nearly as scared of messing them up. Agree 100% with the above quoted. The pretty, fancy knives have their place. But for real meat cutting and breaking, the fancy knives have nothing on the Victorinox and Dexter meat knives. In my humble opinion, they don’t work as good as the Dexters and Victorinox knives, and yet they usually cost 10 times more.The Cen-Tex Smoker said:I would even look at the dexters and victorinox's of the world.
I have used and recommended Victorinox for years. Why? Because they work and work well for breaking. And they are very affordable to boot. Even at my age and debilitated condition, I can kill, skin, gut and break a hog down to a primal state in under an hour with 2 simple Victorinox knives. A 5” skinner and a 5” curved, semi-flexible boning knife. Throw in a 8” or 10” breaking knife (scimitar) and I can easily reduce that time to 45 minutes flat.
On the same note, take a look at any slaughterhouse or abattoir and see what they are using. Dexter and Victorinox are used by 95% or more of them. The very same can be said of butcher shops.
With all that said and aside, if I had just half the money that most of the forum heavyweights have, I would probably have a few of the expensive knives myself. However they would be show pieces. When it came time to do the real work, I would break out the Victorinox.

Take ownership of one of the kitchen drawers; thats what I did. Green ones are the ones that go in the dishwasher. The wife is not allowed to touch the others. The Miyabi black is a joy to use and so beautiful!

Look at the guy fieri knuckle sandwhich 8 chefs if you can fint it on amazon or ebay. It is not expensive but a pretty good knife and can take abuse I have a set and they hold an edge very well and are comfortable.
