Valentine Steak and Lobster

When it's Valentine's, you go big or you go home. So two boneless ribeyes from 44Farms and a big ole lobster tail were the essentials for dinner. It was a simple yet magnificent cook. The steaks were seasoned with 44Farms S&P mix while the tail was merely covered in butter. The medium egg was about 400-425.
I am one of the rogues when it comes to cooking lobster as I take the tail out of the shell to cook. My wife and I love the slight char and BBQ flavor that shell hinders. I cooked the tail while the steaks were resting. I eventually cut the tail in half to help speed things along. Both the steaks and the tail turned out great! I promise you, the lobster is as moist and tender as you can imagine.

Never tried cooking the lobster directly over the coals. My wife prefers them steamed, so I cut the tail down the middle, snip the bottom joints, and then put it (and the claws if I have them) in a foil packet with water and butter. Then throw the packet on for 30 minutes.
