Found these tonight with my compulsory walk through the meat department.
Foodsavered and 3 packs in the freezer. The 4th is on standby in the fridge for tomorrow night. SV and sear is the plan.

If I get through traffic tonight fast enough, that's the plan. If not will use traditional reverse sear.

This is one of my favorite beef cuts. Our local Wegmans carries them in the summer months. In the Winter months they sell them as thicker cuts and call them Chuck Eye roasts. I could never find them locally and used to buy the Chuck Roll from BJs or Restaurant Depot and remove the rib eye section and cook the rest like a brisket.The last time I bought them at Wegmans they were $5.49/poundLarge BGE

I also messed up a little by seasoning with Lawry's Seasoned Salt before the sear. Little bitter taste from seasoning burning. I knew better but couldn't stop myself.
