New Year's prime rib with pictures
Yno
Posts: 529
I was taken to task in another thread for reading more than posting and for not posing pictures, so here goes.
We has some friends over for New Year's Day and fired up the Egg for a prime grade rib roast. Seven and a half pounder cooked at 225* for four hours until IT of 115*, then tented until the Egg was at 600*. Had flames shooting out the top of the Egg - very entertaining to our guests! I had cut the bones off the roast and tied them back on for the initial cook, and separated them while the Egg was coming to temp for the reverse sear. Served with maidera mushroom sauce and horse radish sauce, and accompanied by mushroom risotto and haricots vert (green beans to all but Ynette). And of course some very fine Cabernets!
No plated pictures as everyone was hungry and I didn't want to get out the whip and chair to fend them off.

You bet! Ynette thought I was crazy when I said I was going to do it, but now she likes it. I have had a lot of comments on it, all positive.

This is slightly cheating as it is a picture of the next day's leftovers, but it really looks the same. Are forks allowed as part of the table setting if they have not yet been used? That is my reflection in the spoon, and no, I don't look like a fiddler crab with different size arms.

Nice looking cook.
Have always admired that handle. I would bet you’d have to be careful around it, lest you be gored! -

Nicely plated! I know you did it right because it's not slathered in gravy like you see some people do.Yno said:Foghorn said:Great cook and great egg.
