I’m cheating tonight. Little brisket running in the XL. Hit it with salt, cracked pepper, granulated garlic, and granulated onion last night and let it sit for 24 hours. Probably about 9 lbs after trimming. Making some brisket sliders for my daughters birthday tomorrow for the adults.

Just got back from a little Cajun place that is as close to NOLA as u can get. Ate way to much. Oysters, frog legs, and some spicy shrimp and red potatoes in a red gravy that was killer...oh, bread pudding too

Last night's Egging, some ribs (pork and beef) found during a freezer clear out. I'm not keen on these separated pork ribs as there's not much meat on them and they tend to dry out, but I pulled these while still a bit chewy and they were good.
