The brisket from the side o’ beef that we bought was thin and likely to dry out easily so I decided to put the new grinder attachment to work. 

Ground brisket burgers for dinner. 
MMBGE / Large BGE / XL BGE (Craigslist Find) / SF30x80 cabinet trailer - "Ol' Mortimer" / Outdoor kitchen in progress.

    Next time, do 40% chuck, 40% brisket, 20% boneless short rib.  You will never eat a better burger.

    The DudeThis is a very complicated case, Maude. You know, a lotta ins, lotta outs, lotta what-have-you's. And, uh, lotta strands to keep in my head, man. Lotta strands in old Duder's head. Luckily I'm adhering to a pretty strict, uh, drug regimen to keep my mind, you know, limber.

    Avril Bleh butchers in downtown Cincy regularly do a blend of brisket and short rib.  I buy it often for burgers and will be buying again for a meatloaf.

    I had planned on buying a LEM #12, but figured I’d check out how this grinder works first before spending that much money. So far I’m happy.

    Dedicated stuffer is a must, if you think a 5 pounder is enough, but a 10 etc etc ...I have the #12 if you go that route you will be pleased

    Nice setup there @CTMike. I bet those burgers are going to taste pretty damn good.

    You will like the ability to grind if new to you. Fresh ground beef, turkey, pork... it is fun to mix things up. 

    Do you have a kidney plate for your setup?  If so, use when making chili or chunky meat for stews.  It is a game changer.

    As a Costco member and an owner of a Cabella's grinder that I could throw a deer in antlers first, I've tried every combination known to man.  The wife has a palate of a Michelin chef and decided on that blend above all others, and i cannot disagree.  It's as excellent for smash burgers on a cast iron pan, with butter, as they are 1/2 inch thick traditional as there is the right amount of fat to meat ratio to hold them together without being greasy, not even a little.  And by brisket, I mean just the flat.  I even incorporated the point into it once, just once, by doing just a full prime packer alone.  Not good.  Give it a try and you'll be overly satisfied.

    Yup, pretty sure the 200 means how many pounds it weighs.

    I was looking at the LEM 25# dual gear, and then noticed the 20% off sale - damn near ordered the 20# motorized version - don’t feel like Death By Swmbo right now.

    Nice work @CTMike.  You can't go wrong with grinding your own meat.  I have a LEM #12 and am very happy with it.  My favorite beef blend is chuck, short rib and sirloin, preferably dry aged (at home).
    It's "Smokin Gal", not "Smoking Al".
