OT: Played With My New Toy
The brisket from the side o’ beef that we bought was thin and likely to dry out easily so I decided to put the new grinder attachment to work.

Avril Bleh butchers in downtown Cincy regularly do a blend of brisket and short rib. I buy it often for burgers and will be buying again for a meatloaf.

You will like the ability to grind if new to you. Fresh ground beef, turkey, pork... it is fun to mix things up.
Do you have a kidney plate for your setup? If so, use when making chili or chunky meat for stews. It is a game changer.--------------------------------------------------

Nice work @CTMike. You can't go wrong with grinding your own meat. I have a LEM #12 and am very happy with it. My favorite beef blend is chuck, short rib and sirloin, preferably dry aged (at home).
It's "Smokin Gal", not "Smoking Al".
