Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I'm going to stuff spicy chorizo under the skin. I was a little concerned it would add too much salt, so I appreciate your comment - thanks. Going into the brine tomorrow am.

I'm sure the amount of smoke wood and type of wood used will determine the smoke flavor added to your stock. Just like it did your Turkey. So if your bird was smoked to your liking I bet the added smoke flavor to your stock will also be good.Thank you,DarianGalveston Texas -

Sometimes I can taste some smoke - I wouldn't mind a little more. Other times no smoke. I suspect it might depend on how much skin gets tossed in the stock.

Great Cook !!! We are traveling to the inlaws in florida this yr . .6 kids under 5 in one house SO they announced we are going out to eat at Capital Grill instead of cooking this year. They are hosting, so they make the call . . . but MAN dissapointed is an understatement. I might buy this rub and do an early Bird myself . . . yours looks great !!Columbus, OH
