Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Great looking bird @Photo Egg . Smart move posting now; in another week we'll be dodging the turkey threads like landmines.

I'm going to stuff spicy chorizo under the skin. I was a little concerned it would add too much salt, so I appreciate your comment - thanks. Going into the brine tomorrow am.

Anyone use an Egg'd turkey carcass to make turkey stock? Does the smoke flavor carry over in a bad way?South of Nashville - BGE XL - Alfresco 42" ALXE - Alfresco Versa Burner - Sunbeam Microwave

I'm sure the amount of smoke wood and type of wood used will determine the smoke flavor added to your stock. Just like it did your Turkey. So if your bird was smoked to your liking I bet the added smoke flavor to your stock will also be good.Thank you,DarianGalveston Texas -

Sometimes I can taste some smoke - I wouldn't mind a little more. Other times no smoke. I suspect it might depend on how much skin gets tossed in the stock.
