Advice needed re eggfest logistics

Going to first eggfest.  One thing I’m making is pork burnt ends.  Set up starts at 9. It’s an hour from my house.  Doors open at 11.  Event ends at 3.  I don’t think I have time to do the entire cook there so I want to smoke at home then put in foil pan, etc at event. Here’s my question-should I smoke at home the night before and refrigerate,  or smoke early morning then put in foil pan and transport to event (but by the time the grill gets going it might be two hours in the pan)?

    I’d smoke the night before and refrigerate.  That should work just fine and give you peace of mind heading into the event.  You’ll be busy enough the morning of packing up and making sure you have everything.  Good luck!

    3. Set up as close to @Hotch as you can. He will have what you need. And you can leave most of your gear at home :smi:smile:

    Most importantly, proximity gives you dibs on everything he cranks out!

    @Daddyshack - make a simple sign with details of your cook, ingredients, etc. Folks want to know what they're eating, and you will get tired of telling people about it after the 30th time.

    Make sure you pack foil pans, paper towels, and trash bags besides whatever else you need for your cook. 

    Also, plan to get there as soon as they open for the cooks. The time before the gates open has its own charm. Getting to know the other eggheads, downing your breakfast beers,  etc

    @Daddyshack - just remembered another one. 

    Figure out a way to elevate your work table. Depending on what the legs of your table(s) are like, either cut lengths of PVC pipe and slip em on the feet of the table, or get bed risers  from places like Bed Bath & Beyond. Just be careful about bumping the table if you use the bed risers.

    Makes a BIG difference , and your back will thank you later.
