Brisket Flat

picked up a Flat today at my local Grocery store. never cooked just the flat. It is 5.5lbs, usually I cook a whole brisket for about an hour a pound. Is it about the same cook time? for my Flat 5-5.5 hours? Anything to do differently than the whole brisket cook?

I would bet it will go faster. The surface to mass ratio is pretty high. If I were cooking it, I'd inject it with some beef broth (for some insurance against drying out) and keep the temp a little lower that a whole brisket. I burnt the sh!t out of one last fall. Did Apple juice with the wrap and it was one of the best we have had. Very happy with final result.

That looks solid PapaJ. Nice work! I have never had a flat that didn't turn out like shoe leather.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
