I'm going to make some starting in an hour or two.  SWMBO is getting off work no earlier than 8, and it doesn't take long to make.

For now this is a placeholder.

I was reading up on it, has been years since I made it, and I found this gem:

    All I will offer is the following from @SciAggie and is the best way I have found to nail the soccarrat:
    "Soccarrat - There is a trick I've learned to making a consistent soccarrat. Push the tines of a fork against the bottom of the pan and scrape it back and forth - to feel the bottom. It slides easily as the rice is cooking. As the soccarrat develops, the fork will begin to "stick" a little - that's the rice browning. Once that happens around the pan, it's done. Rotate the pan around the fire to make sure you toast things evenly."
    Enjoy the cook and the follow-on banquet.  Gonna be great.

    I’m at the casino right now. However when I get home tonight I will post a before and after. I have a pretty heavy 2 day growth I’m going to mow down with the shavette.

    I realize you are giving @nolaegghead  the business here but much like "the friggin cow drives the cook" with protein, with paella, "the friggin rice drives the cook."  I'm sure you will be justly rewarded.

    He called me tonight pre-cook. He invited some guests over to share dinner with. My guess is he cooked, they all ate, and now they are sitting around chatting over drinks and talking about stuff. That is only a guess. It is also possible he actually lives in his mom's basement and doesn't have any friends. 


    Note: I said above it is possible he lives in his mom's basement and doesn't have any friends. I know that is factually incorrect. I have seen his house, been inside his house, met his mom (who doesn't live in his house). I also have met those that have claimed to be his friends. Therefor, I suggest my former theory is correct and accurate rather than my latter.
