Fish pasta with a tomato basil sauce

SWMBO requested a lightish fish dinner so here is what we did. Cooked a spaghetti squash.

Started the sauce with some onion, garlic and diced tomatoes.

then I added some evaporated milk and basil and let it thicken while the fish cooked.

Not a big fan of spaghetti squash, but we're getting into veggie noodles. Get you a spiralizer, some firm veggies, and have at 'em. Easy and surprisingly good. Unlike most things here, they're cheap and the learning curve is small. You can mix them 1/2 and 1/2 with actual pasta too.
