I went by Costco to get a couple of things and they had their meat and seafood roadshow going for Father's Day. I was shocked when I saw several of these in the meat case! The price wasn't bad compared to online. I've never cooked a wagyu brisket before. Is there any difference from cooking prime I should know about?

It'll cook faster than you think. Start probing for doneness at 185ish.

They usually are done faster and at a lower temperature (190s).

@Smokin_Good Brent cooked one at Butt Blast this year with OakRidge BlackOps on it. He was prepping it around 8am and we were serving it for dinner. Baffled me.
John and him both said I would be blown away by how much faster they cooked due to the way the fat is in them.

I don't know that they cook that much faster given the way the cow drives the cook but as above, start checking earlier however don't be surprised if it doesn't release til the low 200's *F. Also be ready for more fat renderings.
Prep and trim just like any other brisket. FWIW-
Off to Costco.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
I’m no expert but they do finish fast. I start probing at 185 and I’ve pulled at 202. As Cap has stated the cow drives the cook. Probing like butter is your endpoint. Have fun!Sandy Springs & Dawsonville Ga

My Costco said this was a test run to see if they should carry them year round. They are flying out the door. He said they are hoping to carry the full SRF line, including primals and individual steaks very soon!Keepin' It Weird in The ATX FBTX

Funny. They had all the SRF labels turned down to show the price sticker on the back. Price label just says “commodity wagyu brisket”. If you did t know what you were looking for you would never find them.Keepin' It Weird in The ATX FBTX
