    It almost sounds like you're disappointed that there was more for you...

    ACMB.  We were working on two tables, and I was in the pivot.  While I did do a proper graze later (including the shepherds pie), we were head down for six hours or so banging that one out.  

    This is the eggfest that prompted the table leg extensions (and the one that put me in the hospital).

    @20stone - I’m just giving you the business man!  I remember you guys busting tail for most of the afternoon.  I also remember the line that was some 50-people deep waiting to sample your stuff once word got around.

    It was an impressive line, but likely due more to our inefficient delivery than anything.  That being said, we were glad everyone hung out to have a taste.

    Inefficiency is only rewarded with long lines when the food is worth the wait.

    Cooking recommendations can vary depending on one of many factors:
    -size of Egg or Eggs you will have to cook on (and what accessories you have to expand cooking space)
    -is it a people’s choice fest and if so did you want to try to win?  The more serious you are about this the more you’re likely willing to spend on food.  If you’re serious you have to be prepared to not only cook something that stands out but be prepared to cook a lot.
    -did you want to be able to sample other cook’s food? If so, you may plan on at least one cook that can sit unattended while you graze.  A lot of cooks barely get away from their Egg or Eggs and may have to rely upon exchanges with nearby cooks.  Good to have a friend available who is willing to bring you samples of the better dishes
    -is your health department going to be present and be a pain in the arse?  If so, telling them that you cooked something at home is probably a bad idea (it may be tossed out).
    -estimated number of attendees and servings per dish

    I’ve cooked in a few fests and have cooked on 2-3 Eggs each time cooking 4-6 dishes from the following list:
    -brisket (slices and burnt ends)
    -moink balls
    -char siu
    -samosas (fried in a wok)
    -chicken & shallots (wok)
    -pig shots
    -pizzas
    -chocolate chip cookies
    -cheesecake

    You can search Eggfest postings and links for Eggfest recipes (@egret has a site with links to the GA mountain fest recipes and more) for ideas.
