Best friend Brisket

greetings friends,

my best friend Neal is in from Arlington va and we are smoking. Texas Brisket. He’s the best person I know. Incredible person. Hoping the brisket lives up to the night.

hes also an incredible mixologist. Well give you our dilaed in boulivardie when the whiskey takes effect/wears off. :)

    Hey! Centex knows wood...wait.

    Anyway, that is a ton of mesquite for a bge. if you find that bark is getting dark after it sets up nicely, i would wrap it up so it does not get too much smoke. if you get back in there for any reason I might fish a few of those chunks out. 2-3 go a very long way with mesquite in a bge

    Great to see you two. Glad we made it in. Sick kid, and we left about 45 minutes later with to go boxes. 

    .... I’m most proud that I didn’t do my Putty impression.

    Yep. Lotsa wood. I really load it up. But with a cook in the lower half of the 200s I prefer that profile for the brisket and pork butts.

    Thank you @The Cen-Tex Smoker and @MaskedMarvel for clarifying that for me.    I probably switch where I put the probe in every time I do a brisket - always somewhere in the flat though.  I will go with your method on my next one. 

    But then again I'd have to force myself to do fat cap up...

    With cap down the point is riding on the flat so "under the point" hits the target.  Regarding the grate, it looks like one from the 'ol Ceramic Grill Works store but just a guess.  FWIW-

    Final product. Really good. Brussels and home fries on the blackstone. Brisket lean and juicy. Sandwiches were amazing. I took pics as I could remember to pick the camera up. 

    Thanks - everyone - in this forum, for bringing me along so we could nail this cook today. Really special people here. I genuinely invite anyone who can, please, come by our house for a beer if you can. 

    Pics next. Then on to the house aged whiskey. Might send one more pic of that later tonight. ;)
