That’s what I figured. I love that cut from them but it’s been a couple a years since I’ve done it. Back on the list.

Nice cook.

For the nth time - what do I tell the meat counter guy to get picanha? Top sirloin with fat cap on? Or something else. I keep wanting to do this again, but can't seem to remember the details.

At Central Market it is 50/50 if they know it as Picanha, so I always have Wikipedia up and ready to show them. https://en.wikipedia.org/wiki/Picanha

I'm starting to think I hate everyone in Texas. If I went to order a picanha I'd get a look like I had two heads. Hell, even my phone don't know what that shît is.
