Great cook right there. Should generate some decent revenue.
Hopefully you have some help feeding the sticks.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
Loaded the Shirley up this morning at 8:45 am.
Just wrapped all the briskets with an IT of 165 average between the five.

So we finished the cook at 4:30 pm. Spent the next 2 hours resting, chopping and panning. Pans are in the fridge for overnight.
I will fire up the Shirley about 10:00 am in the morning and let it settle in to around 250-275 in the main chamber. Then load the pans to warm them up. We will then deliver it all to the warming cabinet in the concession stand. Others will portion and serve.
This is a first for me. I learned a lot about fire management, baffle control and air flow today. All 5 briskets tasted great and were very moist! 5 of the butts were spot on. I had one that ended up tasting fine but was still very tight! Cooked it till 215 IT, foiled and panned it and it still was tight. I guess it was that one in a hundred that would never break loose.
Paul and Tyler Shirley build a damn fine cooker!!
A few more pics of the cook today.
Thanks for looking!!

Great pics Hotch! Looks awesome! Did you notice any difference in smoke flavor between the main chamber and the warming box cooks? That's if you snuck any bites. Was there a big difference in wood consumption when using both the main chamber and warming box compared to just the main chamber?

Job well done brother. Dumb question, is that salt in the first picture? Assuming that is there to absorb some of the grease to prevent scorching and creating an "off" taste.Large and Small BGECentral, IL
