Had good friends stop by. Wanted to try something new along with an old favorite. Thought about a twist with the Lamb. So I infused the milk and cream used for the grits (complements of @northGAcock ) with garlic and rosemary since the lamb had the same seasoning.
After steeping for about 10 mins, I strained the milk and made the grits as normal.

Cooking the protein on the large:
Lamb after quick sear on the MM
Plated:
The beef tenderloin finished with perfect timing as we finished the appetizer. I seared it then served with carrots, Armenian pilaf and homemade bread.
Dessert was cookies in cast iron cooked on the egg. Here they are cooling:
It was a pretty good meal.

Thanks for all the nice comments. It was a great meal with great friends.
I will be honest and state that after I steeped the garlic and rosemary in the milk/cream and tasted it before adding the grits, that I almost dumped it and started over. But I said what the hell - I am going all in. I am glad I did. The flavor complemented the lamb wonderfully. The proof in the pudding was when the husband, after eating the main course, stated “This might be a little rude, while the filet was cooked and seasoned perfectly, have any more lamb and grits? I have had lamb and I have had grits, but that was stupendous combination and would love another dish of that”
Needless to say, he got another plate.
It was a fun meal with good friends. Nights like this make up for putting up with all the Mon-Fri crap.
