Cooked the bacon mac and cheese and parmesan garlic potatoes for 45min at 225 on the egg. Snake River Farms wagyu ribeye filet joined for last 20min until IT of 130. Took everything off the egg and got it up to 600 degrees. Seared the ribeye 90sec per side and topped with butter. Perfect medium.
Sides were slightly overcooked but they were close and had great flavor. All in a three compartment Jim Beam cast iron skillet I scored from TJ Maxx for $4! They discounted it because it had slight rusting. This was a fun one!

I don't do Instagram but I'd learn how if I was pulling food off my egg like that! Looks fantastic"The pig is an amazing animal. You feed a pig an apple and it makes bacon. Let's see Michael Phelps do that" - Jim Gaffigan

Thanks guys! Trying to cook on the egg more this year. We live in an apartment complex so I have to wheel it down to the grilling area and take an elevator to use it. Gonna make sure it happens at least once per week.

Beautiful cook and skillet. Didn't know that Jim Beam-branded CI existed.

Are those 9" CI skillets? If so, can you fit two of them on a large Egg?

Nice cook!“There are three rules that I live by: never get less than twelve hours sleep; never play cards with a guy who has the same first name as a city; and never get involved with a woman with a tattoo of a dagger on her body.”
