Gingerbread Upside-Down Pear Cake finished with a drizzle of salted caramel. Royal Riviera Pears from Harry & David. Some pics illustrating set-up. Baked at 350F-375F for roughly 30-40 minutes.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

#2 The cast iron is something special. Agreed Finex cookware is a brilliantly thought out quality build product. I'd love to own their entire catalog.
#3 Where did the little spacers come from? Those are the front auger support from a Stoelting F231 series machine. They are a 304SS part that should be replaced as needed under normal wear and tear occurs. I normally just field scrap them but, awhile back decided to retain a few and what do ya know they work brilliantly as spacers
