Yeah, that is the problem with a fresh bird. 20 pounds and I figured 5 hours to cook, an hour resting, and then cutting up the bird and putting in two AL pans with drippings. Separate the white and dark meat and then go to our niece and nephews for a 2:00pm meal. Three hour cook sort of blew that time line. Not the only bird or protein being served so not a real problem. Can keep it warm in the big wall clock until time to go.thetrim said:
