Jamaica Jam

Was having lunch with @pigfisher some months ago and he had an idea for a Jamaican themed potluck. Original date was the weekend Hurricane Harvey slammed us , so we had other things to worry about. Decided to do it today, with some of the usual suspects attending - @20stone, @20stonespice, @pigfisher, @The Cen-Tex Smoker and tfj, my sis and BIL. My sis has been to Salado before, so she kinda knows the egghead fever, but my BIL was uninitiated.

On the menu-
Coconut rice and beans ( 20stonespice)
Beef patties (20stone)
Jerk pulled pork (pigfisher)
Jerk chicken and coco bread ( yours truly)
Mango and peach sangria, jicama slaw, and rum cake (my sis... Yes, I put her to work)

    Pictures, dammit!

    I want to relive the massive amount of great grub we devoured.  TFJ and sis jumped in and helped assemble the beef patty, and @20stonespice made gravy out of the reisual beef patty drippings.  Also, @Goatrude made an encore performance in stew form, thanks to @caliking.

    Pulled pork on the coco bread, Goatrude on the coconut rice and beans, a jerk chicken drumstick, and grave on the beef patty made some great bites. 
    (now only 16 stone)

    Everyone else did other stuff. I did not. I ate. It was glorious.

     @pigfisher 's jerk pulled pork. With BIG forks. The sauces he made were farkin good, especially the mustard one. Which I didn't even get to taste until the end. Poor planning on my part. This was stuffed into the sourdough coco bread.

    The spread (clockwise from 12 o'clock)
    Goat stew
    Coconut rice and beans
    Coco bread
    Jerk pulled pork with mustard, mild habanero , and spicy habanero sauces.
    Beef patties
    Jicama slaw

    Gravy and jerk chutney on the lazy Susan.

    And rum cake. Like that STL gooey butter cake , with rum sauce.


    I ate like it was Thanksgiving. So stuffed that my next meal may be on Monday.

    We should just hire him to fly around and make empanadas. I showed pics of his empanadas on the TV tonight and my guests were drooling. And that was after they had eaten pit beef I shamelessly stole from him.

    @Hawg Fan & @R2Egg2Q we've done a couple of these themed pot-lucks, and each one has been a blast. Learned how to make some new dishes, plus got to eat other folks' food!
