    I just remembered I was going to do an overnight brisket tonight.  Now I don't feel like it.  I do, however, want to smell the pecan smoke all day tomorrow while working outside.  hmmmm.....

    I better go light the egg.

    I just cracked a new Holland "the poet" oatmeal stout and lit the egg.  I have to try to get caught up at work in the morning.  I will try to sneak out of the house at 530 or 6 and get 3 hours in.  Family will barely know I am gone.  Calibrating thermo.  I will try to hold 250 thru the night.

    This is a 15# choice pre-trim brisket. Can't remember if it was from WalMart or ShadyMaple. Got it out of the freezer last weekend. Oak chunks for smoke, Egg is around 250*. I'm about to toss the brisket on and head to bed.

    What's the status of the patio @DMW
    I have the quote in hand. Need to get plot plan over to my GC to pull a permit. Been traveling too much in August to get it done. Have a prelim drawing, just need to measure aprox distance to property lines tomorrow and send it over.

    And, brisket is now on.

    Brisket on here too. Man I need an xl for these cooks.  I had to push the corner of the brisket in to close lid. 

    Also my ever trusty redi-check went in the garbage like a lumpy rub.  Would not turn on. I will be going by feel. . . And Thermapen

    Doing the same here. I have a Stoker and two Mavericks. I didn't feel like dealing with wires and cords tonight, so set the temps and let it ride. I'll check on it in the morning and adjust accordingly.
