we did some form of this at Austin Eggfest 2 years ago. I thought the toasted rice powder really added a cool secret little flavor on the finish. The Jeaw (fish sauce with all kinds of spices) added a lot too. Rice powder is easy (toast rice in skillet then grind). The Jeaw is a little more involved but I'll dig up the recipe if you want to try it. It's the same sauce they use in Crying Tiger (Thai steak) so it's a good one to know.
I'll find it for you today and post it here. That way it will all be in one place. I have it posted under Tiger Cried but we have tweaked it a little since then. I'll find the good one and post it up.

Looks great but I procrastinate when it comes to recipe with ingredients I can't count on one hand
Also, always wanted to try roasting citrus and chili but forget! My cheat version of Thai chicken marinade is this alone, pity eh!

Doing this tomorrow evening. Got the chicken marinading overnight, part boned breasts. Taken off the skin to let the marinade in as per recipe. That fish sauce is potent! I hope it's good, 5 lbs of chicken in the bowl!bgebrent said:I saw @CincyTiki post this awhile back and knew I had to try it. My much better half and I love Thai food. Grilled these direct bone side down, should have turned them as well but didn't. Good texture but not enough lemongrass / chilli taste for me. Will try again another time.

Been wanting to give this one a try since I saw this post a few months ago. Finally got around to it tonight. Used boneless skinless thighs and grilled direct at 300F for about 25 minutes until they hit 165.
