Can someone tell me what's better than ramps?

One of my very favorite things is when ramps come, in the spring. I like to grill them with a little olive oil, salt and pepper. Or saute in a cast iron pan and serve with eggs in the morning.
Tonight, some quick pork chops. Love the small for this sort of stuff - quick to come up to temp, and easy to control the temps.
Two chops with Dizzy Pig IPA, two with Paul Prudhomme's blackening seasoning. That blackening seasoning is great stuff - nice flavor, but mild enough for the fam.
Ramps on while the thicker chops finish. Hmmm, gasket looks a bit off in the back.

Never had one, but hear they're delish!

@tarheelmatt grab some if you can find them. They've got a really great mild onion/garlic flavor. Really easy to use.
@theyolksonyou I wish! I've heard of some of those festivals and I think I'd love it. Some people say Chicago is named after the Native American word for ramps- but I don't know of a ramp festival here.

Wild morels, ramps, brook trout - you fellers are making me green with envy that have all these tasty foods available. Great looking plate.
Of course - we do have cheap brisket in Texas...Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

No ramps out here. But we have wild fiddlehead ferns, wild mushrooms and wild asparagus. Fresh picked wild berries. Nature's bounty.

@piratebill TBH the rub is really mild - I don't taste the hops. Maybe I should try it on vegetables. Have you had it?
@bgebrent thanks brother! work's been crazy - i was going to throw it all on the gasser but decided I need some egg therapy
@sciaggie we are lucky! fresh berries from michigan in the summer are great. but you guys keep the best briskets to yourselves

Can you buy Ramps commercially or do you have to rummage thru the woods for them. BTW my fav grilled veggie is asparagus=======================================

I saw a huge patch of them when I was golfing yesterday (tells you where my ball was...). I wouldn't pick them though. Pretty good chance they had been peed on more than once already this year.Mt Elgin Ontario - just a Large.
