Smoked pork jowl is a common side dish during sugar shack season. Very hard to find during other times of the year.
Sliced thick.
400F indirect until crispy.

Well damn, that looks fantastic. Did you brine or season it at all?THANK YOU FOR YOUR ATTENTION TO THIS MATTER

@paqman that's a great plate right there.
Gotta admit I had no clue about the tradition but I have been using pork jowl in any beans recipe for the past year or so. Slice thick and quick fry then into the mix. I can always find it in the local main-stream grocery (Kroger).Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
I purchased this one already cured and cold smokedLegume said:Well damn, that looks fantastic. Damn - you are killing me! How I miss sugar season. Couple of bushes around Athens and Delta Ontario that we used to visit when the kids were young. The Athens bush was run by an ex-Quebecer and he used to hand out jowl with the sugar treats....Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

1) That looks great.
2) I had to google "sugar shack". Several places of that name are best visited with a roll of $1 bills...
XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

@paqman: Looks great. Where'd you find that cut?
Let me guess... it was next to the XLs at Costco on April 1st. -
@GrateEggspectations IGA in Buckingham. This time of the year you'll find it pretty much everywhere.GrateEggspectations said:@paqman: Looks great. Where'd you find that cut?
