    Funny the bottom rack was faster - I would have thought the top would be quicker.  There are few better eats than brisket on a stick!

    Ribs are killer (hopefully, no pun).



    Bottom rack is done, top rack will be another hour+.
    Love the knife too.

    Dexter Russell 12" Butcher Knife S112-12. Total impulse buy.  Saw it at the Restraunt Supply store and thought it was to cool to pass up.  Works great for breaking stuff down and crowd pleaser when cutting ribs.  I feel like @SGH when I wield it.

    Great looking ribs right there Oz. I haven't had any luck finding those in central IL. Did you happen to ever find them? 
    Never had any luck finding them in CI.  Which is to bad, best chance would be a real butcher who breaks down their own primals, or one who can order plates in their sub-primal order, the cut is IMPS #123A.

    With the local stock yards closing, onsite butchered might be extra hard to find.  The Eureka Locker might be a possibility.  But, if that doesn't pan out, you might try the cryo wrapped ones from Lindy's ... ask Bob (the butcher) for a whole plate ... or two.  Ask for a Green Egg discount on the cryo wrapped plate ... seriously.  That's where I get mine from.

    @Jeepster47 thanks for the tip. Not real happy with Lindy's rights now. Put an order in for some warranty replacement parts in December and they finally got deliver this past weekend. Went to go pick them up and they odered me a plate setter instead of a base. Told me to wait until Jim gets back from vacation and contact him.

    Fantastic ... that's probably my platesetter if it was for a large!!!  I'd be very surprised if Jim doesn't take care of you.
